Apple Banana Crepes (Raw Recipe)


Apple Banana Crepes


2 Ripe Bananas
3 Apples
1/2 Lemon, Juiced
Vanilla to taste (1T)
Cinnamon to taste (1T)

Method:
Place all ingredients in a high speed blender



Put smooth batter in circles on teflex sheets



place in dehydrator at 120 for 2 hours, then turn down to 105
Once you can safely tear off the sheets, flip onto dehydrator screens and dry an additional few hours


I was planning on making a whip topping to put inside the crepes and then add some sliced strawberries, but the kids ate most of the crepes before I had a chance. If you did want to make the whip topping, my method is this:

1 Cup coconut meat
1T honey
2Tsp Cinnamon
2Tsp Vanilla

Blend all in a high speed blender till really smooth, add water as needed to blend, but careful not to use too much, this mixture should remain thick.

Take 1 crepe flat, add some whip topping, sliced strawberries and roll. In the event that these dont all make it out of the dehydrator? Stuff with 1/4 of a banana and enjoy!

Very Low Fat Curry


A friend of mine was talking about this curry that she makes. Hers is adapted from an Ani Phyo recipe. I have never seen the Ani recipe, but my friend gave me the list of ingredients that she uses and from her list, I adapted  this recipe. Its real good. REAL good.

Ingredients:

2 Apples, cored and diced
cap of ACV
juice of 1 lemon
dash of cinnamon
1T raw honey
Spices to taste:
Curry Powder, Ginger, Garlic, Garam Masala, pinch of Salt
Place all ingredients in a high speed blended and blend till smooth, add a little water if needed to blend, I ended up adding about a tablespoon of chia seeds to thicken mine up.

Serve of veggies, rice, noodles, whatever, SO GOOD!

Raw Brownie Truffles



Raw Brownie Truffles
Makes 25-30 truffles

1 Cup Walnuts
½ Cup raisons
½ Cup pitted dates
2T cacao powder
Ground cinnamon for topping
Ground coconut for topping
Any other item for topping
*I find the dates make these sweet enough, but add your sweetener if needed.

Method:

Put the nuts in the food processor and process till a flour
(here is partial processing)

Add the dates and raisons and process till a dough forms
Add cacao and process till well incorporated


pinch of bites of dough, make into a ball, roll in topping of choice




 these are rolled in cinnamon. The cinnamon is absorbed pretty fast, but, its worth it, they taste so good!


These are SO yummy! Some other topping ideas could be:
Ground nuts
Dehydrated, powdered fruits (strawberries would make these so pretty!)
Cacao powder
Cacao nibs
Ground goji berries
Mix of cinnamon, cayenne and bee pollen


These are a HUGE hit with the kids too!
